Easy & Gluten-Free Lemon Almond Cookies
Ingredients
- 350 g (3½ cups) almond meal or almond flour
- 100 g (½ cup) coconut sugar
- Zest of 1 lemon
- 1–2 tbsp fresh lemon juice
- 3 eggs
- 30 raw almonds (optional)
Instructions
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, combine the almond meal, coconut sugar, and lemon zest.
- In a separate bowl, whisk together the eggs and lemon juice.
- Add the wet ingredients to the dry ingredients and mix until a thick, slightly sticky dough forms.
- Roll the dough into small balls and place them on the prepared baking tray. Gently flatten with your fingers.
- If desired, press a raw almond into the centre of each cookie.
- Bake for 14–16 minutes, or until lightly golden around the edges.
- Let cool for 5 minutes on the tray before transferring to a cooling rack.
